Cooking Recipe Exchange!
So I was tweeting about baking, as I am wont to do occasionally, and
arirashkae made mention of a lovely Mini Chocolate Chip Cheesecake recipe she had found. Me, being a total sucker for cheesecake, offered a recipe exchange! :D
So here's two recipes I've scrounged up and am planning to try at some point soon.
Toffee Almond Shortbread
1 cup butter, room temperature
1 cup sugar
1 egg yolk
1 tsp. vanilla extract
½ tsp. salt
½ cup chopped almonds, lightly toasted
½ cup toffee bits
2 cups all-purpose flour
Preheat oven to 350°F. Butter a 13x9” pan. Using an electric mixer combine butter and sugar until blended. Stir in egg yolk, vanilla, salt, almonds, and toffee bits. Add flour all at once and mix on low speed just until incorporated. Dough will be course and crumbly. Press evenly into prepared pan. Bake for 20 – 25 minutes, until barely colored. Cut into bars while still slightly warm.
Yield: 3 dozen bars
Prep time: 20 minutes
Baking time: 20 – 25 minutes
Applesauce Cake
2 ½ cups self-rising flour
1 ½ tsp. baking soda
1 ½ tsp. salt
¼ tsp. baking powder
¾ tsp. cinnamon
½ tsp. cloves
½ tsp. allspice
2 cups sugar
½ cup shortening
2 eggs
1 ½ cups applesauce
½ cup water
2 cups raisins
1 cup chopped pecans
Sift dry ingredients together. Set aside. Cream shortening and sugar. Add eggs, applesauce and water. Mix well. Blend in dry ingredients. Add raisins and pecans. Bake at 300° - 350° for one hour or until cake tests done.
Icing
¾ cup butter
¾ cup confectioners sugar
2 tbs. milk
1 ½ tsp. vanilla
1 cup chopped pecans
Cream butter and confectioners sugar. Mix in vanilla and pecans. Ice the cooled cake.
